Mamak Fried Spagetti

This Indian-Muslim mamak fried mee is popular dish in mamak stalls all over Malaysia! 

Now, you can replace spagetti with mee for a better mouth bite.

1 onion, thinly sliced

8 stalks choy sum (sawi), cut 1 inch (optional)

1 green chili, cut slantwise

1 potato, quartered, boiled and sliced

5 prawn fritters, cut ½ inch

400g spaghetti, boiled al dente

200g beansprouts, tailed

1 large tomato, cut 6 half-wedges

4 stalks spring onions, cut 1 inch

1 tofu, cut into 3, fried and sliced

2 eggs

Salt and oil as needed

Sauce Ingredients

3 tbsp tomato sauce

2 tbsp oyster sauce

2 tbsp caramel soy sauce

1 tbsp thick soy sauce

1-2 tbsp chili paste

  1. Heat oil, stir-fry onion until fragrant.
  2. Add sauce ingredients, stir.
  3. Add choy sum, chili, potatoes and prawn fritters. Mix well.
  4. Add spaghetti, beansprouts, tomatoes, spring onions, tofu and salt.
  5. Push spaghetti to the side, break eggs in the centre.
  6. Stir quickly to combine then serve.
